Protein Pumpkin Spice Latte

Ingredients:
1 cup unsweetened almond milk
¼ cup pumpkin puree (unsweetened)
1 scoop vanilla or unflavored protein powder
½ tsp pumpkin pie spice (or a mix: cinnamon, nutmeg, ginger, clove)
¼ tsp ground cinnamon (extra, optional)
½ tsp pure vanilla extract
1 shot espresso or ½ cup strong brewed coffee
Optional sweetener to taste: stevia, monk fruit, Truvia
Instructions:
Heat the base:
In a small saucepan over medium heat, whisk together:
almond milk
pumpkin puree
pumpkin pie spice
vanilla extract
(and cinnamon if using)
Heat until warm but not boiling.
Blend with protein:
Pour the warm mixture into a blender. Add:
protein powder
optional sweetener
Blend for about 20–30 seconds until smooth and frothy. (If you don’t want to use a blender, use a milk frother or shaker bottle after letting the mixture cool slightly.)
Add coffee:
Pour your espresso or strong brewed coffee into a mug. Top with the blended pumpkin-protein mix.
Top (optional):
Sprinkle extra cinnamon or pumpkin spice on top.
Tip - Make it iced: Chill the mix after blending, pour over ice, and add cold brew instead of hot coffee.
