Protein Pumpkin Spice Latte

Servings: 1


Ingredients:

  • 1 cup unsweetened almond milk 

  • ¼ cup pumpkin puree (unsweetened)

  • 1 scoop vanilla or unflavored protein powder

  • ½ tsp pumpkin pie spice (or a mix: cinnamon, nutmeg, ginger, clove)

  • ¼ tsp ground cinnamon (extra, optional)

  • ½ tsp pure vanilla extract

  • 1 shot espresso or ½ cup strong brewed coffee

  • Optional sweetener to taste: stevia, monk fruit, Truvia


Instructions:

  1. Heat the base:

    In a small saucepan over medium heat, whisk together:

    • almond milk

    • pumpkin puree

    • pumpkin pie spice

    • vanilla extract

    • (and cinnamon if using)

Heat until warm but not boiling.


  1. Blend with protein:

    Pour the warm mixture into a blender. Add:

    • protein powder

    • optional sweetener

Blend for about 20–30 seconds until smooth and frothy. (If you don’t want to use a blender, use a milk frother or shaker bottle after letting the mixture cool slightly.)


  1. Add coffee:

    Pour your espresso or strong brewed coffee into a mug. Top with the blended pumpkin-protein mix.


  2. Top (optional):

    Sprinkle extra cinnamon or pumpkin spice on top.

 

Tip - Make it iced: Chill the mix after blending, pour over ice, and add cold brew instead of hot coffee.
