Ginger Honeydew Refresher

*WEIGHT MAINTENANCE*

  • 1 medium honeydew melon, rind removed, seeded and cut into chunks

  • 1 12 oz can frozen apple juice concentrate

  • 3/4 cup water

  • 2 tablespoons lemon juice

  • 1/8 teaspoon ginger

  • 3 drops green food color

  • 1 28 oz. bottle sugar free lemon-lime carbonated beverage, chilled


In a blender or food processor with metal blade, combine melon, juice concentrate, and water. Cover; blend until smooth. Add lemon juice, ginger, and food coloring, blend well. Pour into 4 quart non-metal container. Cover; freeze at least 3-4 hours or until slushy, stirring occasionally. Add carbonated beverage, stirring gently to blend.


1/2 cup is one serving. Makes 24 servings.
