Turkey Gravy

  • 2-3/4 cups fat-free, low sodium chicken broth

  • 1/3 cup dry sherry

  • 2 tablespoons all-purpose flour

  • 1 teaspoon chives

  • 1 teaspoon thyme

  • 2 tablespoons fresh chopped parsley


Place a sip-top plastic bag into 2 cup glass measure. Pour drippings from pan into bag; let stand 10 minutes to allow fat to rise to top. Seal bag; snip off corner of bag. Drain into a medium saucepan, stopping before the fat layer reaches the opening. Stir in 2-1/2 cups of broth and sherry. Bring to a boil; reduce heat and simmer for 10 minutes. Combine remaining 1/4 cup broth with flour in small bowl and whisk until well blended. Stir into sherry mixture, and bring to boil, stirring constantly. Sir in herbs and serve.
