Texas Tuna Burgers
11 oz drained canned tuna, flaked
2/3 cup instant nonfat dry milk powder
12 saltines, made into crumbs
1/2 cup onion, chopped
1/2 cup canned mild green chili peppers, drained and chopped
1 egg, beaten
1 tablespoon plus 1 teaspoon olive oil
2 cups canned crushed tomatoes
1 teaspoon chili powder
In medium mixing bowl, combine the tuna, milk powder, cracker crumbs, onions, chili peppers, and egg. Mix well and form into 8 equal burgers.
In 12-inch non-stick skillet, heat oil over medium heat. Add tuna burgers and cook, turning once, until lightly browned, 2-4 minutes on each side. In small bowl, combine tomatoes and chili powder, then pour over burgers. Cover pan. Reduce heat to low and let simmer until sauce is thoroughly heated, about 5 minutes.
