Pumpkin Pecan Pudding

  • 2 eggs beaten

  • 1 15 oz. can pumpkin

  • 1 12 oz. can low-fat or skim evaporated milk

  • 3/4 cup Splenda® Brown Sugar Blend

  • 1 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 8 teaspoons chopped pecans


Preheat oven to 350° and spray 8 ramekins with non-stick cooking spray. In a large bowl, mix all ingredients except nuts and divide among ramekins. Place dishes in a 9x13 baking dish with enough water to cover the bottom of the sheet, bake for 45 minutes. Remove from oven; sprinkle each pudding with 1 teaspoon of shopped pecans. Serve warm or at room temperature.
