1-1/2 lbs. medium sized Idaho potatoes
1/3 cup skim milk
1-1/2 tbsp I Can't Believe It's Not Butter!®
Salt and pepper to taste
Small bunch chives, chopped (optional)
3 tablespoons horseradish, grated (optional)
Bring water to boil in a large pot. Peel into potatoes, cut into sixths. Add potato chucks and boil until fork tender (15-20 mins). Drain into colander. Place potatoes in large bowl. Mash potatoes with hand-held masher or electric mixer. Slowly add milk, butter, salt and pepper, along with chives and/or horseradish if desired. Stir vigorously until fluffy.
1/2 cup is one serving.
Makes 8 servings.
