2 ripe bananas, mashed
1/2 cup quick-cooking oats, dry
1-1/2 scoops vanilla protein powder
1/8 teaspoon vanilla
1/8 teaspoon cinnamon
1 cup pineapple, chopped small
Line muffin tin with 4 paper liners and preheat oven to 400º. Mash bananas together, squeeze in oats with your hands. Add remaining ingredients and roll into 4 balls. They should be dry enough that they can stand on their own, but moist enough to handle delicately. Place in muffin tins and bake for 20 minutes. Turn off oven and leave muffins, letting them set for 15 minutes.
